 Slicing a Julie Mango - The Art of Caribbean Cusine The Julie mango is one of the sweetest mangoes you will find, it also has a slightly tangy flavour. It is often used in Caribbean cuisine, adding a special tang to recipes ranging from salsa, curry, chutney to chow and salads. Mango chicken is a favourite in many Caribbean households.

There are recipes for hot-spicy mango chicken, mango peanut stir fry, and all sorts of combinations, including coconut mango chicken and rice.  

This video shares an age-old technique for slicing your mangoes in the art of Caribbean cuisine.  The sliced and diced mangos are easy to eat and a polite way to dine in company and avoid messing one face with mango juice. It is also an attractive way to serve the fruit on a platter and adorn a table.

Billy the Irishman, founder of the Hastings Farmers Market, sat in the shade of his umbrella selling mango. He cut big slices and offered them to visitors, explaining what variety they were. He demonstrated how to slide a Julie mango and cup a Graham.

Chapter 22 - Chattel Houses Icons of Freedom

 

Barbados Chattel Houses are scattered throughout the island. They are tiny  little wooden homes sitting on rocks with no foundation. Thats becuase the land was usually owned by the planters who would often evict the ownrrs. In that case the homes were packed on carts and moved to another plot.

You will see them beside some of the most stunning landscapes, on the hils and beside the beaches. Many are right beside deluxe villas, mingled right into the fabric of the island. 

Living next to many of the the luxury villas and stately homes are the chattel house owners, sugar cane cutters, fishermen, working men and women, along with Hollywood stars. 

It is a landscape of stylish, stately homes flanked by tiny, unpretentious dwellings of everyday folk. The tiny houses, some say, are inappropriately close to deluxe holiday accommodation. By visitor expectations, Chattel home may well seem like an eye soar. Yet, the majority of Chattel Home owners take pride in their modest house and keep them clean and tidy.

Rogues 9 Hasting Farmers Market - Luc

 

Rogues Chapter 9 is about Hasting Farmers Market. One of the vendors is Luc the French Baker.

 

Chapter 9 tells the story of how Billy the Irish man established Hastings Farmers Market marketplace and saw it expand past his hopes. The market is a very multi-ethnic gathering of extraordinary personalities. In this chapter 9 story Luc, the French Baker, shares his story of coming to Barbados and starting a bakery. He makes some of the best french bread you will find anywhere. My favorite is his sourdough.

Luc is not alone, there are about a dozen vendors all  colourful characters from all over. It is a mini-United Nations with crafts people from all over mingling with visitors from everywhere.
